Saint Henri Holycow is a washed bean that was roasted in Canada and gifted to us by a fellow traveling snoffeecob. The first couple of shots we enjoyed together when he was visiting us, a bit acidic but still quite pleasant. After dialing in the coffee further, it truly began to shine, offering a very balanced and deep cup. The flavor profile includes dark chocolate notes, nutmeg, nuts, honey, salty berries, and a tea-like quality.
