At our local shop Franzen we usually get our favorite the Boot Panamaria beans but as I was feeling adventurous (and maybe a bit cheap). I went for a bag of the locally roasted Franzen Sumatra.
To be honest: the espresso from these beans tastes a lot better than the label on the bags look. I had to dial in a couple of times to get it right, but even the runny shot at 1,25 already produced a full bodied, sweet thick syrupy chocolaty cup that is very true to the Italian style of espresso.
At 0,9 on the Perfetto I hit the sweet spot and got all of the above, with a hidden layer of extra flavours: this perfectly strong, sticky deep cup of espresso also showed its caramel, liquorice anice and even a bit of dutch "stroop". "Stroop" is a sugar syrup with a viscocity that is right in the middle between molasses and maple syrup. Try it on pancakes!
